Preparing for a large crowd? You can easily set aside your cooked brisket or slab of ribs by wrapping them in aluminum foil, covering with towels, and placing them into an empty ice chest with lid.

Always soak your wood chips in water before smoking.

Never take your ribs off of the grill until they've started to separate from the bone. A lot of misconception is that you are cooking your ribs too long. Keep them low and slow until they're nearly falling off the bone.
