(YOUR NAME) Salsa.......
because that is what your friends are going to call it!
(Just please let them know about the spice that you are using!!)


What you will need:


1 - sweet onion
(Buy one that look squished or is more orbicular in shape.)


1 - can of 28 oz. diced tomatoes


3 - 4 jalapeno peppers...BUY FOUR!


1 - bunch of cilantro


3 - garlic clove RAW pieces
(Buy one garlic glove and split it up to medium size pieces.)


1 - poblano chili
(as big and flat as you can find)


1 - box freezer-safe plastic bags, quart size


AND........


Smallwood General Spice!!!

Instructions:

Heat your grill.

Open the can of tomatoes and place in colander to drain, then place in fridge.
Dice 1/3 cup of cilantro and place in fridge.
Take onion and cut a big slice out of it and remove the skin.
Pull tops off of jalapenos and puncture with a fork or knife.
Clean garlic pieces until they are clean and without skin.
Remove top and split poblano pepper and de-seed.

Take onion, garlic, and jalapenos and the poblano and place on grill to cook.

FIRST:
Pull garlic when it is toasted and not burned....this will happen quickly. (PLACE IN FREEZER SAFE PLASTIC BAG.) Grill onion slice until is is charred a "little bit" on both sides. Rotate peppers until the skins blacken....... when they do, pull them and put them in the freezer bag for 5 minutes or longer. (WARNING: When dealing with peppers, wear plastic gloves or use a plastic bag over your hands. IF you decide to do this with your bare hands...have some milk handy to wash you hands. Capsaicin (8- methyl - N - vanillyl -6-nonen amide) is an active component of chili peppers. If you touch your eyes or private parts without disinfecting your hands...you are going to have an unpleasant time.)

SECOND:
De-skin the peppers as much as you can. Get rid of seeds and the internal ribs.

THIRD:
Place tomatoes, cilantro, the poblano peppers, 3 of the jalapenos, garlic and onion in a food processor and PULSE.....usually about 10 times or until you like the consistency.

TASTE TEST:
If you think it needs more "heat", add the other jalapeno.

FINALLY:
Taste test and add Smallwood General Spice to taste.
