Country Style Ribs on the Grill
with a Side of Spicy Garlic & Parsley Mashed Potatoes
So tender, and boneless!
Mighty, meaty goodness!

First, sprinkle kosher salt and black pepper on each side of the ribs, rubbing light brown sugar into the meat.
Sprinkle the desired amount of Smallwood General Spice over this combination (both sides).
Scoop up the overspill of the ingredients and rub into the outer edges of the meat.
(Remember that Smallwood General Spice is low in sodium and sugar free. If you are on a special diet, you can adjust as necessary!)
TIP: Always have an extra bottle of our General's spice in case the other one surrenders!
Cover in foil and refrigerate for at least 2 hours.
Remove from the refrigerator and bring to room temperature before grilling.
Place on indirect heat (notice that the ribs are protected by the plate in the bottom of this type of smoker) and smoke with soaked wood chips.
We chose 1/4 oak and 3/4 apple wood chips. Begin smoking at 165 degrees for 30 minutes.
Raise to 300 degrees during the next 30 minutes, then keep it at 300 degrees for the last hour.
This will be a total cooking time of two hours.
TIP: (If you like a nice char on your country ribs, as we do, turn the ribs over
and
move the ribs toward
the outer edges of the
grill for the last 10 minutes of cooking to take in some direct heat.
Now, they have your signature grill marks. Aren't you the grillmaster!?)
While you are grilling the ribs, boil and mash some potatoes.
Flavor with the desired amount of butter, milk, garlic salt (or garlic powder in case you are watching your sodium),
parsley flakes, pepper, and Smallwood General Spice.
Top with more Smallwood General Spice for an aesthetic and more flavorful dish.
TIP: (Bring this dish to your next family reunion! Your relatives will empty it for you. You'll be a hit!)
Serve a rib just like steak with your desired sides. It just take a knife and fork, no gnawing on the bone.
Diners with delicate eating habits (shyness, dentures, braces) will embrace this type of rib.
Kids are picky eaters...........slice-up these country style ribs with the mashed potatoes, or french fries.
Although we adults will usually enjoy these ribs that stand alone, you can serve some
dipping sauce with them for your children
(ketchup, BBQ sauce, whatever they dip their nuggets into) -
and suddenly your kiddos are getting their share of protein for dinner.
(Real protein, not soybeans and fillers as found in those dratted chicken nuggets.)
TIP: Let the kids sprinkle their french fries with Smallwood General Spice. It's healthier than salt!
